Egg bhurji, Anda bhurji, Indian style scrambled egg



Egg bhurji, or indian scrambled egg is probably the quickest and most versatile meal. It is perfect for a weeknight when you want a quick fix without spending much time in kitchen.

Time taken: Prep time-5 mins | Cooking time-10 mins | Total time-15 minutes

Ingredients 

2 eggs
1/2 cup stir fry vegetables, or
1/2 cup of onions and tomato, finely chopped
1 green chili, finely chopped
Salt and pepper to taste
1/2 teaspoon oil or ghee
1/4 teaspoon red chili flakes

Method

  1. Add oil to a non stick pan on medium heat 
  2. Add stir fry vegetables and green chili to the pan and saute them for a few minutes 
  3. Add salt, pepper and chili flakes to the pan
  4. Break the eggs on top of the vegetables and fold them on medium heat. If you want you can also beat the eggs in a bowl before adding. 
  5. Cook the eggs for 4-5 minutes if you want them soft. Add another 5 if you want them golden.
  6. Serve hot with bread or chapati.

Note
You can add corn, mushrooms, beans to make it more mouthful.
You can garnish it with coriander leaves.
