Egg bhurji, or indian scrambled egg is probably the quickest and most versatile meal. It is perfect for a weeknight when you want a quick fix without spending much time in kitchen.

Ingredients
2 eggs1/2 cup stir fry vegetables, or
1/2 cup of onions and tomato, finely chopped
1 green chili, finely chopped
Salt and pepper to taste
1/2 teaspoon oil or ghee
1/4 teaspoon red chili flakes
Method
- Add oil to a non stick pan on medium heat
- Add stir fry vegetables and green chili to the pan and saute them for a few minutes
- Add salt, pepper and chili flakes to the pan
- Break the eggs on top of the vegetables and fold them on medium heat. If you want you can also beat the eggs in a bowl before adding.
- Cook the eggs for 4-5 minutes if you want them soft. Add another 5 if you want them golden.
- Serve hot with bread or chapati.
Note
You can add corn, mushrooms, beans to make it more mouthful.
You can garnish it with coriander leaves.
