Salad in Lettuce Wraps





I made this lovely salad wrap when I was experimenting with South Beach Diet. That time I used to really rack my brains on how to increase my protein intake while still staying a vegetarian. 
Granted the options are quite limited when carbs are not a primary meal ingredient and meat is not an option, but that's the time I really started giving a thought to how to get more bang for my burp! ;-P

Course: Side for Lunch or Dinner
Serves: 2
Time Taken: 20 minutes



Ingredients

1 head iceberg lettuce, washed and outer leaves removed. Individual leaves used as wraps
1 medium sized onion, diced
2 medium sized tomatoes, chopped
1/2 cup olives (green or black), sliced
1/2 cucumber, diced
1 small red or yellow pepper, finely chopped
1/4 cup feta cheese
2 tablespoon lemon juice
salt & pepper to taste



Method


  1. Mix all the veggies from onion to pepper with cheese in a bowl
  2. Add lemon, salt and pepper and mix well
  3. Place this mix in lettuce cups.
  4. Serve as snack or salad


Note
You can add red kidney beans, chickpeas, cottage cheese, peanuts to increase your protein portion. You could also add cashews, almonds, sunflower seeds if you like.
In veggies you can experiment with chopped, steamed asparagus, shredded carrots, sweetcorn, finely chopped green beans, diced celery, chopped cilantro, avocado. 
For mixing it all together, you can use yogurt, honey, cream cheese, mayo, whatever floats your boat.
