Easy Pineapple Rice





I am not a big fan of fried rice, so I tried making Pineapple fried rice without frying anything!
Usually my motive for a meal is use whatever you have in the fridge. Pineapple rice happened when we bought a huge pineapple from Tesco and somehow eating it just like that was not enough :)

Time: Prep time - 15 | Cooking time - 25 minutes | Total time - 40 minutes


Ingredients

2 cups rice, pre-boiled and refrigerated
1 1/2 cups pineapple diced into 1/2 inch cubes
1 cup green beans, steamed. I used frozen.
1 medium sized red onion, sliced
2 teaspoon ginger garlic paste
1 green chili, finely chopped
1/2 teaspoon red chili flakes
1 tablespoon soy sauce (optional)
A bit of oil to coat a baking sheet
salt & pepper to taste



Method



  1. Turn on the oven at 200 C
  2. Line a tray with baking paper and lightly oil it.
  3. Mix pineapple, beans, onions, ginger garlic paste, chili flakes, green chili, salt & soy sauce together and spread out on the tray
  4. Place the tray in the oven for 20 mins, till pineapple starts turning lightly brown.
  5. Take a big microwave friendly bowl and add the pre-made rice in it. 
  6. Pour the veggies on top of the rice and mix thoroughly
  7. Turn on the microwave on high for 5 minutes (just to heat up the rice).

Note 
You can heat up the rice with veggies in a wok on medium heat also. However I have found that on mixing them together, rice tends to break and stick to the pan. I prefer mixing cold rice with vegetables and then nuking it together. 
You could also add salt when making the rice, instead of adding it to the veggies.
You can use as many different vegetables as you like - peas, carrots, peppers, mushrooms, broccoli. Go dabble.
